WHY HE’S AMAZING: Because he’s using his impressive culinary pedigree to make elevated and honest comfort food.

BACKGROUND: Aujourd’hui, Radius (Boston); Orrery (London); Jardinière (San Francisco) 

MUST-TRY DISH: Garganelli with chicken oysters, bacon and black truffle butter. 

CURRENT OBSESSION: His rotisserie, which he uses for ultrajuicy chicken. 

FAVORITE NONWORK ACTIVITIES: Kovel goes fishing for local sole. “If I don’t come home with a fish, I’m not disappointed. I believe in letting my future kids and their kids enjoy fish.”
